Thai or Siamese cuisine was virtually unknown outside of Thailand until the middle of the last century. Like other aspects of Thai culture, Thai cooking owes much to its friends and neighbours from China, India and even Europe, but at the same time it retains the essential Thai-ness of the native food.

When asked to describe Thai food, one usually says: “It’s hot and spicy!” Actually there is no single adjective to describe the basic characteristic taste of Thai food, which comes from a mixture of salt, pepper, garlic and coriander root, pounded together. It is this aromatic combination that turns fried fish or chicken into Thai fried fish or chicken. Not Chinese fried fish or American fried chicken. A large number of herbs, spices, leaves, roots and even flowers are widely used for their aromatic qualities. These include lemongrass, kaffir Lime leaves and of course chillies.

Another essential ingredient in Thai cooking is coconut milk or cream blended together with the other ingredients to give a smooth creamy base.

A typical Thai meal consists of steamed rice with many different dishes. The dishes are not courses and they are all served at the same time. Take a spoonful of one dish with some steamed rice and enjoy a different taste and texture in each dish. It soon becomes clear that Thai cuisine is unique, not merely a regional adaptation of Chinese or Indian cooking.
